You must have good vinegar on hand, you must.

To be designated as sherry vinegar, the vinegar must be made from sherry wine -- which only comes from the Jerez region of Spain. Grand Reserve sherry vinegar is aged for 25 years and is sweet, smooth, and fruity. Cooking with it yields a much higher quality end result compared to lesser products. We particularly like it as a dressing for delicate salads (like endive) and over fried eggs (do it, we dare you).

Grape must -- also called arrope -- is made by reducing grape juice to a thick, sweet syrup. Use it as you would a vinegar, but more judiciously in dressings and sauces, as it has a much more intense, rich flavor that's a little sour and a little sweet.
