The black winter truffle is a true natural luxury. Rare and indulgent, they are sought after by epicureans around the globe who see them as black gold—they're considered the best of the best when it comes to black truffles. With an earthy, musky scent and flavor, they're only available for a short season each winter (pst...it's winter in Australia now and we got our hands on some!).
Store truffles in the refrigerator wrapped in a paper towel in a sealed container with fresh butter or eggs. Truffles are best when consumed within three days of delivery, but they will last up to 10 days. We suggest shaving them over scrambled eggs, pasta, or risotto.

Always refrigerate truffles and do not wash truffles with water -- simply brush them off with a soft brush. At the most use a slightly damp paper towel to brush any existing dirt off the truffles, but only do this right before use. Truffles are always best consumed within 3 days of receiving them (this is when their aroma is at their highest) but they can be kept for up to 10 days in the fridge in the container they arrive in.
