“Mamushka is not actually a real word.” That’s how Olia Hercules opens her cookbook, summing up her playful take on the traditional dishes she grew up eating in Ukraine. With vibrant, inviting photography to inspire you, you’ll be whipping up Stuffed Ukranian pasta and Kefir flatbread in no time. There are plenty of lip-puckering favorites from her home country, like Sour Cabbage and Cold Beetroot Soup, but Hercules also shares flavor-packed recipes from neighboring Eastern European countries. We’re trying to decide which to try first: Armenian soup with lamb & prune meatballs or the Azerbaijani chicken with prunes & walnuts (destined to become a regular in our roast chicken rotation).
