The cast iron cookware retains heat, keeping the dish warm long after it's been taken out of the oven or off the stove. It's hard to look at the French company's picturesque cast iron and ceramic wares and not daydream about the *magnifique* things you'll make in them. Staub specializes in enameled cast iron cookware made in Alsace, which makes for superior browning and heat retention (perfect for those hours-long braises). The pieces work hard, but they’re pretty enough to go straight from stovetop/oven to the table.
