This small shiner is just the thing to quickly skim the fat off the top of a simmering ragu or the foam that forms when cooking a soup. The short-handled skimmer is made of solid brass and has a just-barely curved spoon. It can stand in for a slotted spoon, too, scooping dumplings and fried bits out of broth or hot oil.
