Porcelain is an unexpected but welcome (lighter!) twist on the traditional cocotte. The black cocotte has a textured surface and a matte finish, so it looks very similar to your cast iron but weighs a lot less! It’s oven safe up to 572 degrees Fahrenheit so it performs similarly to your cast iron, too (just don’t use it on your stovetop!)—great for braises and casseroles. The white cocotte maintains the more traditional look of porcelain, with a smooth and glossy finish.

During a walk in the Drôme countryside, the Revol brothers, Joseph-Marie and François, noticed some unusual white streaks on the ground which they quickly identified as a kaolin (type of clay) deposit.
