You already love your Staub cocotte for soups, braises, and stews. This stainless steel insert lightens things up by turning your cocotte into an instant steamer. Simmer a couple inches of water, set the insert inside the pot, and quickly turn out perfect hard-cooked eggs, healthy fish, homemade steamed buns, and any veggies you fancy (we like broccolini, squash, and turnips).

It's hard to look at the French company's picturesque cast iron and ceramic wares and not daydream about the *magnifique* things you'll make in them. Staub specializes in enameled cast iron cookware made in Alsace, which makes for superior browning and heat retention (perfect for those hours-long braises). The pieces work hard, but they’re pretty enough to go straight from stovetop/oven to the table.
