Cheese needs to “breathe” and eliminate excess moisture as it ages—otherwise it'll age too quickly, and no one wants moldy cheese. That’s why we’re so excited about the Cheese Vault: It’s a brilliantly simple and reusable storage solution. Place the good stuff in the food-grade silicone container (the Original has a divider for two smaller pieces so the flavors don't mix, but you can remove it if you've got one big hunk). Then? Write the name of the cheese directly on the container and—ta-da!—pop it in the fridge. The base and top are designed to wick away moisture, and it has a snug lid so other fridge flavors won’t sneak in. Once you’ve eaten it all up, simply wipe away those write-on labels and start all over again.

The Original Cheese Vault is best for use with hard cheeses like Parm and Manchego. For soft cheeses like Brie and Camembert, go with the Soft Cheese Vault. When writing on your Cheese Vault, only use a ballpoint pen on the polished ends. Don't worry—instructions are included as a lil' reminder.
