Tapped from maple trees in New York’s Catskill Mountains and infused with the warming spices of gingerbread, we like it over all our favorite breakfast foods—pancakes, French toast, waffles, and, of course, bacon. But we also like it in unexpected places: in a persimmon upside-down cake, on roasted squash bruschetta, spicing up a sugar pie, or adding a subtle twist to chocolate cake. However you use it, it’s a wintertime delight.
