K+M Chocolate is the brainchild of Michelin-starred chef Thomas Keller and Italian olive oil producer Armando Manni, who, together with chef-turned-chocolatier Chi Bui, scientists at the University of Florence, and cacao farmers in Ecuador and Nicaragua, spent 5 years creating a totally new type of chocolate: one made with organic extra virgin olive oil in place of cocoa butter. Not only does this innovative process create chocolate bars that taste exceptionally complex, but it also preserves the naturally occurring antioxidants in the cocoa beans—so these bars are good tasting and good for you.
