In fact, it’s got a whopping 470 mg/kg of polyphenols (those are naturally-occurring antioxidants) while the minimum for extra-virgins is 55 mg/kg. That means it’s got lots more perks than your average olive oil, and it’s just the thing you’ll want to pair salads and crusty breads with. (It’ll shine in all sorts of recipes, too.)
