Ruling the roast.

Great coffee starts with great whole beans, and have we got good things to say about these. Everything here starts out as green coffee from a carefully nurtured network of partner farmers who are committed to producing the very best beans sustainably. Once it gets to Portland, Oregon, the folks at Coava roast it to perfection to make all its tasting notes shine. It’s single-origin coffee like none other. (You’ll believe us when you take your first sip.)

Take your pick—everything here is roasted with drip brew methods in mind (we’re talking French press, AeroPress, pour over, automatic dripper, and cold brew).

Guatemala Nayo Ovalle is a full-bodied, chocolatey roast that hails from Guatemala. Grown in a family farm since the mid century, the Bourbon and Caturra varieties are now carefully tended to by the grandson of the original farmer. Look for notes of orange and almond, too.

S.O. Blend is a blend of top-notch specialty coffees from East Africa, Central, and South America. It’s rich and chocolatey with tasting notes of Honeycrisp apple, dark caramel, and chocolate-covered fruit.

Meaza is a “zero defect” lot, meaning the beans are sorted three times by hand (so only the very best beans make it into the roast). It comes from the Kochere Cooperative in Ethiopia and has notes of candied citrus, honeydew, and hibiscus tea.

Meet the Maker

Coava Coffee

PORTLAND, OR
Veteran barista Matt Higgins always dreamed of preparing coffees that were both exciting to the pros and inviting to everyday drinkers. So he got to work and sought out farmers in under-sourced regions who were committed to producing top-notch beans—sustainably. Now, his farming partners are bringing us some of the high-scoring single-origin coffees we’ve met (and you bet it’s all roasted to perfection).
