We probably don’t need to tell you that we’re charcuterie fans, but we do need to tell you about this European-style salami. It’s handmade in Vermont by butcher Erika Lynch using fermenting and curing methods borrowed from southwestern France. (The pork’s all sourced from small, local family-run farms—just in case all that wasn’t impressive enough.) It’s a process you’ll taste in any sausage you try here. French-inspired saucisson sec, finocchiona with black pepper and fennel, spiced chorizo...what a spread.

Our love of charcuterie runs deep—so you can imagine our excitement when we met Babette’s Table, purveyor of the best-of-the-best pork sourced from local family farms. Everything is handmade by founder and butcher Erika Lynch, who uses fermenting and curing methods she picked up during an apprenticeship in Gascony, France.
