If you haven't tasted caciocavallo cheese, you're in for a treat. This hand-rolled cheese has a mild flavor similar to a mozzarella or a provolone. The process is very detailed: Curds are heated (which prevents the final product from spoiling), and then pulled and stretched by hand, before being hung and aged for 60 days. The cheese lasts and lasts -- the taste simply sharpens over time. We like that it changes as it ages, and we think it's our new favorite dairy product.

  • Made of: Raw cow's milk
  • Size: Comes in 1 pound packages
  • Shelf-life: Cheese does not need to be refrigerated and can last up to a year (if you haven't eaten it all by then!)
