Hand-stretched raw milk cheese.

If you haven't tasted caciocavallo cheese, you're in for a treat. This hand-rolled cheese has a mild flavor similar to a mozzarella or a provolone. The process is very detailed: Curds are heated (which prevents the final product from spoiling), and then pulled and stretched by hand, before being hung and aged for 60 days. The cheese lasts and lasts -- the taste simply sharpens over time. We like that it changes as it ages, and we think it's our new favorite dairy product.

This family-run company makes all their cheese by hand using traditional Italian techniques. Run by Freddy Destefano, an electrician, and his wife Cristina, the company launched in late 2003. Freddy learned the art of cheese from his mother who grew up in Italy making these cheeses for decades. Luckily he decided to produce and sell cheese according to her recipe, so everyone can taste the result of years of well-honed rustic cooking knowledge.
