We've always called these paella pans, but these enameled steel pans, with their graceful signature handles, were originally launched as “buffet servers” — a nod to how people entertained when Jens Quistgaard designed Købenstyle in 1955. (See also: fondue pot.) You can take them from stovetop to oven to table, with or without paella.
