How to Make Hostess Cupcakes at Home

The Hostess Cupcake is second perhaps only to the Twinkie, and is best known for its oddly alluring plastic-like chocolate frosting with white squiggles, which spreads across the top like a bedspread, hiding the chocolate crumb cake and creamy center beneath. The frosting is often eaten as its own rightful snack, peeled away, considered, nibbled on, perhaps put back, maybe set to rest on a desk while you make your way into the cake. Or, if you do as one kid at my third grade lunch table preferred, you can dip it into your milk with the dim hope that somehow it will transform into chocolate milk. (Of course, this does not work -- the frosting bit will instead float and bob, like a lonely chocolate seahorse, in the paper milk carton.)

This recipe is close to any standard cupcake version you may have on hand, but it is infused with cream and then dipped in chocolate, which sounds like a lot of work, but it all goes pretty quickly.

Hostess Cupcakes

Makes 18 cupcakes

For the cupcakes and filling:

2 sticks salted butter, softened
2 cups granulated sugar
2 large eggs
1 cup natural cocoa powder, such as Hershey's Baking Cocoa
2 1/2 cups all-purpose flour
1 teaspoon baking soda
1/4 teaspoon salt
1/2 cup whole milk
1 cup marshmallow fluff
1/3 cup salted butter, softened
1/2 cup powdered sugar

For the frosting and decoration:

1/3 cup heavy cream
1 cup bittersweet chocolate morsels
1 1/2 tablespoons salted butter, softened
1/2 stick unsalted butter, softened
1/2 cup powdered sugar

My filling is oozing out of the icing? Not sure what I did wrong. Also the swishes on top are now filling in after they were loops?

I prefer the lemon Hostess pies, but sometimes I would eat apple. If there were no other varieties available and I felt like a Hostess pie, I would have apple. But if there were many varieties available, I'd definitely go for lemon over anything else!

Suzie-Qs!!! I miss those the most! Back in 1985/86 they also had mint-flavored Suzie-Qs and they were AWESOME!!!!!!!!!!!!

Of course Hostess cupcakes! Of course now I am into eating better but saw and happened to buy 100 calorie Hostess cupcakes. They were good & even my grandsons loved them! Hooray (although I haven't found them in quite a while). Definitely going to make, especially when my grandsons visit! Thanks.

We weren't allowed to eat Hostess stuff. My Mom was into vegetables and olive oil way before it was considered healthy. She read health books and healthy cooking books all the time. Now Dad? He was the one who brought home the first Twinkie. One bite and I had gone to the dark side of cream and refined flour...my tastebuds reveled in doses of more sugary goodness than I thought possible! Those treats were rare...and usually done when Mom was nowhere in sight. I am now 58. Every year...just once a year... I must treat myself to a Twinkie or some similar product. That's all I need...just that one treat to carry me back to the happy conspiratorial indulgence of those Twinkies with Dad.

For me, it's ding dongs and fruit pies. We always take several boxes of ding dongs on our camping trips. Everyone anticipates unwrapping the silver foil and butting into the chocolatey cake and Creme filling. It's very satisfying. Cherry fruit pies are my personal favorite. The sweet cherry filling balances perfectly with the lightly glazed crust. I love that the crust comes apart in pieces all coated with yummy cherry filling goodness.

Well, back in the day when I was a kid, Hostess stuff was really good. I loved the pink Snowballs. I stopped eating them because they don't taste the same. Then I got diabetes and so now I make low carb versions.

Hostess Cupcakes! When we were kids, my brother and I would have a contest to see who could successfully eat the bottom cake part of the cupcake, and leave the middle cream filling and the entire top frosting layer by itself without it breaking. Then we would eat the top and the filling all at once at the very end.

The Ding-Dongs. More chocolatey covering that you could pick off and enjoy, and then - when you had only enough bits left for where your fingers were placed -- you could eat the moist creme-filled cake. Yum.

My post doesn't seem to have materialized, which is just as well because after much consideration—ring dings, yodels—I said coffee cakes. But I realized all of my choices were Drakes! (This is the confusion that occurs when your mother never really let this stuff in the house!). A book about Drakes cakes for your follow-up? Best of luck with Treat Yourself.

Actually the book has recipes from across a spectrum of food companies and DRAKES CAKES ARE IN THERE JUST FOR YOU! Also funny bones, Oreos etc

Hilarious. We used to count the number of cherries in the McDonalds apple fry pie. A record high was seven. One there was just one. I confess I like lemon but like you did not as a kid.

Yes, the lemon ones were vile. I found the cherry filling to have a nasty bite to it, so i always asked for apple, which actually tasted pretty good. ;o)

Ok, I get to post this twice as my original, heartfelt response is not there. Oh my. This is the only Hostess product I ate through my early childhood until now. Whenever I traveled over the years, at nearly every truckstop or gas station I would but these cupcakes. When I was skid, I would pull the frosting off for myself and give the cake to someone else. Only later did I learn to appreciate the whole thing! I will give this recipe a try this weekend as I do one new thing every weekend...that's about all my cooking time. Would love a copy of this cookbook! I feel 5 pounds heavier just thinking about it....

Hostess hand pies! Apple, please. My parents thought anything Hostess was disgusting and never bought processed foods like that, for a variety of reasons. I agreed with them and felt really sorry for the kids who brought store-bought desserts in their lunches. (My mother was an amazing baker of every treat imaginable; she (and then from the time we were each about 7, my four sisters and I baked 5 or 6 days a week.) That said, once a year, on the day before my grade's annual field trip, I'd ask my father to bring me home a Hostess pie when he stopped for our daily gallon of milk. (Six growing kids who play hard outside all the time drink a lot of milk.) Loved that sugar glaze on the pies, as we never glazed our pies like that. ;o)

Actually most of the treats I took to school were ones made by my sisters or me. I don't really care much now for the treats we made back then, as they are all just much too sweet -- even my mother's iconic sour cream cake seems overly sweet. I once traded some homemade chocolate chip cookies for a Hostess cupcake, took one bite of it and asked the other kid if he'd trade back. I got a lot of pleasure from telling the other kids that I had made the cookies, or brownies, or cake, or pie, etc., the day before, from scratch. (It made up for always grounding out to third when we played softball.) ;o)

I always loved the cupcakes (frosting peeler here) but there is something to be said for nibbling off all the crackly chocolate from a HoHo or sucking all the cherry filling out of a Hostess pie (I wasn't a fan of the pastry). I can't even count how many years it's been since I had a Hostess snack.

What, no Ho Ho freaks? My mom refused to buy store bought treats, but I never had a problem trading her pound cake/coffee cake with my classmates for hostess anything (sorry mom, I take your version any day as an adult), preferably my beloved Ho-Hos, which had some weird addictive zingy flavor in them.

I didn't get to eat Hostess Snacks as a kid. It wasn't until after the company went bankrupt and they were taken off the market last year that my curiosity about the cakes began to grow.

I enjoy BOTH TWINKIES and CUPCAKES. (I understand that my answer is a little much, but I hope you'll enjoy it regardless.)
