Veggie Tots in gingery garlic sauce😋 - delicious & a fun way to get your veggies in. Wishing everyone a good & healthy start to your new week🤗. Best, WoonHeng💓⁣ ⁣ Recipe (yields 3 servings)⁣ 🌱Veggie Tots ingredients:⁣ - 1 head cauliflower (~540g without leaves), cut into florets⁣ - 1 medium-size potato (~360g), cubed⁣ - 1/4 cup [15g] carrot, finely chopped - 1/4 cup [20g] mushrooms, chopped - 1/4 cup [35g] toasted almonds, chopped⁣ - 2 tablespoons [15g] cornstarch⁣ - 2 tablespoons [28g] oil⁣ - 1 teaspoon salt, pepper to taste⁣ ⁣ 🌱Sauce: Mix together 1 tablespoon [15g] soy sauce/tamari (for gluten-free), 2 teaspoons maple syrup, 1 teaspoon toasted sesame oil, 1 teaspoon cornstarch in 1/2 cup of water until well combined.⁣ - 1 tablespoon [6g] finely chopped ginger⁣ - 2 teaspoons [5g] finely minced garlic⁣ - oil for cooking⁣ ⁣ ✅Cook cauliflower florets in hot water 3-4 mins, uncovered. Remove & place them in a cold water bath, then drain. Using the same pot, cook potatoes until fork tender.⁣ ✅In a heated pan with a drizzle of oil, sauté mushrooms & carrot for 1-2 mins, set aside. (skip this step if not using these ingredients)⁣ ✅When ready, drain potatoes & mashed (be sure they are drained well)⁣ ✅Chop cauliflower into tiny pieces. Place them in a cheesecloth bag & wring out all the water.⁣ ✅Transfer cauliflower into a mixing bowl along with the sautéed ingredients, mashed potatoes, toasted nuts, oil & season with salt & pepper. Mix all ingredients until well combined.⁣ ✅Form the mixture into tots (made mine into 24g or ~1 1/2 tablespoons). This size 'fry' perfectly well for me. ⁣ ✅Preheat air fryer to 390F for 3 mins & air fry tots for about 10 mins until golden brown. Alternatively, to bake these (will shrink a little) - continue in comment.. ✅ Sauce: Add 3 teaspoons oil in a non-stick pan, then saute ginger & garlic until aromatic.
