There are days when you want to eat cheese for lunch and chase it with handfuls of cake. We'll call them Mondays.

Then there are days when you want to eat cheese for lunch and chase it with chlorophyll, with something that will tip the scales back towards thoughts of salad and away from nap-under-your-desk territory.

When these latter days arrive, and I haven't had the forethought to prep a passable salad, I grab a green juice on my way to work, and pour it into a big glass alongside a thick slice of bread topped with my cheese-of-the-day. Recently, I've been on a ricotta kick, and not just because it looks like a sexy cloud -- it also makes you feel like you're eating ice cream for lunch, only nobody will swing by your desk to find you elbows-deep in a pint of Chocolate Fudge Brownie.

A green juice lightens things up, and also energizes you, so after your lunch break you can return to inbox slaying with vim and vigor. Just make sure you check that green mustache before your 2 PM meeting.
