Wonderful inspiration to finally get the meat grinder for my Kitchen Aid. I love the merguez recipe though after making it (and tasting for seasoning, and tasting again of course) one addition worth considering is Sumac. This traditional Moroccan ingredient adds a bit of tartness or citrus-like tang to the sausage. It's an element I've enjoyed in true Moroccan merguez and it checks the sweetness of the cinnamon a bit. Moorish paella tonight - can't wait!

Friends recently returned from North Africa with many spices for me including sumac. Adding to the sausage is a brilliant idea!! Thank you

Wonderful merguez round up. Having tried disappointing store-bought merguez on the back of Mrs W's initial win, I set about yesterday getting ready to make this.

One day later, my merguez mix is resting in the fridge, flavours developing. Thank you!
