We’ll admit that, in a rare bout of untimeliness, this post is nearing a week old. A whole week. We've hardly ever been this late on the uptake. But all residual embarrassment from our tardiness will be worth it, we think, once you taste these

We’ve seen countless recipes promising the cure to the Great Zucchini Plague that comes every August, but nothing yet that is this inspired, this cakey, this accepting to a sizeable, runny pour of maple syrup. Every breakfast in August, people, should have Smitten Kitchen’s Zucchini Pancakes. A recipe this great could only come from a woman who has theories about pancakes (check), and who takes ‘zucchini population control’ pretty seriously (check). Better late than never? We think so.
