Corn (Steamed) and Corn Stock

Ideally, I’d be eating smoky, grilled corn at every opportunity, but sometimes you just have to boil it in your tallest pot and call it a side dish. Or do you? This genius tip from Epicurious offers an alternative method: steaming the corn in a water bath. The result keeps nutrients intact, and adding Aleppo pepper or Old Bay to the water infuses extra flavor in the process.

Don’t throw that leftover water away, either. Epicurious suggests using it in place of stock or white wine as your recipes call for it. A flavorful method for making corn and no-effort stock to boot? Now this is a tip we’re dying to try.
