Fish Sauce - the New Sriracha?

Remember that phase you went through as a kid when you added ketchup to everything on a plate? Later you might have moved on to tabasco, and maybe even Sriracha. Well clear some fridge space, because there's a new condiment primed to take over.

It's Red Boat Fish Sauce, and it's like bottled umami. Made from only anchovies and salt, it's extremely versatile: add it to a marinade, shake it over scrambled eggs, try it with a burrito. The deep, savory flavor mixes well with any dish, sweet or spicy.

Everyone here in Thailand uses a few shakes in broth based noodle soups... really yum.
