We love the positive changes taking place in U.S. lunch rooms -- whole grains, salad bars, no more mystery meat -- but plenty of others are feeling resistant. Namely, the kids who feel they aren't allocated enough calories (though produce and milk are unlimited for students) and the school districts that fear they can't afford to make adjustments.

We're hoping the increased demand from schools leads to new solutions from local sources to fit those needs, and ideally, a more robust food system will be created. Yeah, we dream big.
