Wine First, Cheese Later
Pairing a cheese plate with wine is an exercise much like matching your clothes -- too many options result in a wave of indecision, and after the ten minutes of obligatory waffling in front of a closet (or cheese case), you default on the same thing you always do. If clothes, this means the worn-in jeans and the comfortable sweater. If cheese? This means brie.
