The Golden Egg

We never cease to be amazed by the incredible versatility of the humble egg. We already use it in countless ways, but this Serious Eats recipe for Golden Egg Curry immediately caught our attention. The eggs here are hard boiled, peeled, fried in turmeric-laced peanut oil and then bathed in a fragrant tomato sauce made with shallots, chiles, and garlic. We’ll be taking writer Kate Williams’ suggestion and doubling up on the sauce so there’s room for some bread-mopping action in between bites.
