Love your article! I have a liquid use for my sweet potatoes and yams. I take a cup of chopped cooked sweet potatoes and add them to a small pot with a cup of hot water and a pinch of cumin. I let them cook for about 5 minutes till they soften some more. Turn off heat and mash them into the water. Let them sit for an hour or so then strain off liquid. Measure liquid and add same amount of organic cane sugar to liquid , stir to dissolve to make a sweet potato syrup. Add this to cocktails of your choice. Recipes on lalovingcup.com
