Perfect! After watching this, I happened to see a Godello at our local wine store, so I grabbed it, and we drank it tonight with sauteed chicken breasts in tarragon sauce, polenta, and raw asparagus salad with goat cheese. And it was ideal!

That sounds like a fantastic pairing. I usually pair a light white with asparagus, but I've not yet found one that works quite the way I want it to. I'm going to have to search out some godello now. Thanks, Sasha.

Great -- and let me know how you like it. Another trick I use with tough-to-pair foods is always to make sure to have some good bread handy. A bite of it between the food and the wine can help neutralize any potential issues. Not ideal, but it helps.
