Guilin rice noodle soup from this hole in the wall (it was my second favorite Chinese meal after eating at Jen's Black Sesame Kitchen). Congrats on the new book.

My favourite noodle dish is Dan Dan Noodles. I love it with ground pork, and spicy!

Oh, the noodle...the best carbohydrate ever devised. I like 'em all. Glass noodles to lasagne. But favorite SHAPE of noodle? Always preferred perciatelli. In a lemon-portobello-cream-marsala. Finished with chopped mint, tossed in the last second before the bowl goes to table. I'm drooling....

I love all kinds of noodles but my absolute favorite has to be spicy beef noodle soup with the knife cut noodles...yum!

I'm dying to have char kway teow again in Singapore. I love pad kee mao. I just tried to pastitsio and need to eat it again. I'm have a hankering for ramen. I'd eat a good rigatoni uncooked. So, all noodles are my favorite.

My favorite noodle dish is biang biang noodles, big chewy toothsome beauties born of violence and slap happy noise and doused in chile oil, cilantro and a heap of raw garlic. Yum yum yum.

My favorite pasta- well, *noodle* dish is probably spaghetti with the classic carrot/celery/onion/tomato sauce and tons of freshly grated parmesan on top!

Growing up, my favorite noodle dish was a dairy noodle kugel. Now I'm particularly fond of Yerushalmi kugel- sewwt and super peppery.

Growing up with a lot of italian food, I have always loved a great pasta with bolognese sauce. My boyfriend and I have recently started making our own pasta- we were amazed at how easy and delicious it was! This book sounds amazing and it would be fun to try making our own rice noodles instead of ordering them out all the time.

I'm about as noodle obsessed as the book author (I actually have a noodle blog) so it's definitely hard to pick just one favourite. In the summer time, it's gotta be Sichuan liang mian. In the winter, it's hard to beat a full-flavoured Singaporean curry laksa. And I'm comforted by a heaping bowl of Korean jajangmyeon at just about any time of year.

Rice noodles made from scratch, served up with a traditional South Indian Yogurt sauce, the 'More kuzhambu'. the whole Seyvai (as rice noodles are referred to in Tamil) making experience was a treat from soaking the rice to grinding, cooking, extruding & finally steaming the noodles.

my family and I love all types of noodles, our current favorite is a cold Asian noodle with veggies, fish sauce, soy and sesame seeds and oil. I am Italian and make my own pasta, would love to learn about making homemade rice noodles, udon noodles and more! Grazie tante :)

When I was traveling in Xinjiang, all I ate were hand-pulled noodles with tomatoes, peppers, and lamb. So tasty; I could never understand how the noodles had such a perfect bite. I believe it was called "lagman." I think it's the Uyghur equivalent of the Chinese "lamian." I can't find it for the life of me in the States!

My husband makes a truly incredible pasta Carbonara. But my ultimate favorite would have to be the minty peanuty rice noodle-stuffed spring rolls I make during the summer. I would love to learn how to make rice noodles from scratch!

I haven't really met a noodle dish I didn't like, but I have to say that having just returned from Japan, I am in love with cold udon noodles with dipping sauce! Thanks for the opportunity.

My all time favorite noodle dish is Pho. I have found that not every Pho spot can make a good bowl...but the ones that do are outstanding. I ate so much Pho during my pregnancy that I know its the reason why my son also loves his 'noodle soup'.

Call it indoctrination but nothing says summer to me like my mother's sesame noodles. Served chilled, these noodles, with notes of ginger and scallions, a taste of peanut butter, and a punch of chili oil, make for the perfect summer supper.

My friend, Linda Scheibal ownes Pasta Poetry, pasta that is the most delicious as well as visually beautiful pasta that I have ever experienced. She learned from her mentors on Lake Garda. I think it is now available at Dean and Deluca as well as everywhere in the Napa Valley.
