Red Grapefruit, Feta and Mint Salad

Each week, we'll cook the finalist recipes for the Cookbook Contest and show you a slideshow of the dish being made. To give you an example, this salad by Adele Hagen was a finalist in one of our test rounds.

Our ingredients: The red onion is huge, so we decided to use a scant half of it. 

Soaking the onions for 10 minutes takes away some of the bite- and prevents dragon breath.

 

Our olives looked big, so we halved them. Up to you!

Assembly stage. We found that to maintain the integrity of the feta, it was best to toss the rest of the ingredients, then crumble it over the top.

Great photos! I like the combination of fun shots mixed with helpful shots (for example, the one that shows how to section a grapefruit.) Pretty salad.

I love the soaked onions trick !! I'll have to add that to my repertoire. Its been ages since I've even made this salad.... you've inspired me to add it back to the mix.
