This terra cotta pot is fashioned from the volcanic soil of Tuscany -- and it happens to conduct heat and cook wonderfully (the company's been doing its thing since 1911). It features a round belly with a narrow opening to help keep the liquid inside where it's needed. An optional enameled aluminum diffuser helps distribute cooktop heat evenly, ensuring a better batch of beans.
