cranberry orange relish
Author Notes: A good friend intoduced raw cranberry relish to me years ago and I've been making my version of it at Thanksgiving ever since. It has a fresh, bright flavor that balances out the richness of the rest of the meal. - sweet enough
Serves 6-8
- 1 16 oz bag of fresh cranberries
- 1 orange
- 3/4 cups sugar (more if desired)
- rinse the cranberries and remove any stems. peel the orange and place the cranberries, the whole orange and half of the orange peel in the bowl of a food processor. blend until the mixture looks like a relish. refrigerate for at least 24 hours. taste for desired level of sweetness, add more sugar if necessary.
