Rosemary Turkey Meatloaf

What You'll Need
Ingredients
  • 2 pounds ground turkey
  • 1/4 cup chopped fresh rosemary
  • 1 cup seasoned breadcrumbs
  • 2 eggs
  • 1 15 oz. can pureed tomatoes
  • 1 teaspoon mustard
  • 1 tablespoon apple cider vinegar
  • 2 tablespoons brown sugar
  • Salt and pepper, to taste
Directions
  1. Preheat the oven to 200C / 375F.
  2. Mix the turkey, bread crumbs, rosemary, eggs, and season with salt and pepper. Press into a bread loaf pan.
  3. Whisk the remaining ingredients, season with salt and pepper, and put on top of the meat.
  4. Poke a few holes in the turkey with a knife so the sauce will seep in, cover in foil and bake until the internal temperature reaches 160 degrees F, about an hour and a half.

Made this tonight, came out great, very good. Did change a few things though; used 1 lb. ground turkey breast and 1 lb. mild Italian sausage, 2 garlic cloves minced and 1/2 of a small yellow onion diced, only 1/2 the Rosemary (fresh picked from the yard), only had unseasoned Panko, so added about a tbs. of dried Italian seasoning. Cooked in a 9x11 glass roasting pan and added carrots and wedged potatoes half way through, uncovered everything for the second half. We seasoned the carrots and potatoes in a freezer bag with EVOO, salt, pepper, and the other half of the rosemary before we added them to the dish.

Great dish, I made this last week and it was spectacular. Lasted the week for lunch. I followed the recipe and added two minced garlic cloves. I will make this again.

My husband made this for dinner last night and we all thought there was way too much Rosemary. The Rosemary so dominated the dish that frankly we threw out the remains.

Additionally included chopped garlic, shallots, spinach & mushroom, and let the broiler caramelize the tangy sauced edges in the last few minutes. Wonderful!
