Eggnog Waffles

Waffles are perfect for any brunch menu. Try this recipe with any leftover eggnog from the holidays. —Pretty Girls Cook

What You'll Need
Ingredients
  • 1.5 cups eggnog
  • 6 tablespoons butter, melted
  • 2 tablespoons sugar
  • 1 teaspoon vanilla
  • 1 tablespoon bourbon
  • 2 eggs
  • 2 cups all purpose flour
  • 1 packet active dry yeast
Directions
  1. Add all ingredients to a large bowl. Mix until combined
  2. Cover with plastic wrap and let rise at room temperature for an hour.
  3. Transfer bowl to refrigerator and chill overnight. If you don’t want to wait, you can make waffles after the hour is up.
  4. Preheat waffle iron and spray with non-stick cooking spray.
  5. Fill waffle iron with amount recommended by the manufacturer in the center of the iron.
  6. Cook waffles until golden brown. Serve with powdered sugar and maple syrup.

Just made these this morning. I also didn't have any bourbon on hand. But otherwise followed the instructions and was pleased with the results. This is a fantastic base waffle recipe. Tender thick waffles, much better than a mix. The only down side was that the nog flavor didn't show up at all. Perhaps the lack of bourbon had something to do with it?? Regardless, its a great base with lots of potential for customizing. This recipe is well worth trying for holiday brunches.

I made these, again, this morning using Pamela's gluten-free baking & pancake mix, and served with Maple-Bourbon syrup. P E R F E C T!

I love these yeast-raised waffles, and eggnog/bourbon is the perfect addition!
