A Bowl Of Mango Sunshine
And that's it -- this bowl of sunshine is ready for digging in.
Nice and simple: lime, yogurt and coconut milk, mango, hot pepper (we used a jalapeno, but ChezSuzanne calls for a serrano), mint, and honey.
With the mint chopped, it's time to face the pepper. Lopping off the bottom makes it easier to cut later.
Merrill is a pro -- those matchsticks are all the same size.
And then she turns them 90 degrees to cut a dice. Next!
You don't need too much lime juice, but it makes a world of difference in flavor.
On to the mangoes: a sharp peeler is essential when peeling super-ripe fruit.
Amanda deftly slices the mango down to the seed...
...And then Merrill makes quick work of the cubing itself. Be sure to save some to use as a garnish!
The creamy good stuff -- milk, coconut milk, and yogurt -- goes into the food processor along with the honey.
After tossing in the mint, Amanda measures out the freshly-squeezed lime juice.
Don't forget to add the mango! You might have trouble making mango sunshine without it.
The peppers go in last, along with a big pinch of salt.
Amanda takes her responsibility for pureeing the soup very, very seriously.

Serves 4
- 3 ripe mangos
- 1 seven-ounce container of plain, low-fat Greek yogurt (I used Fage)
- ¼ cup coconut milk
- ¼ cup low-fat milk
- 1 tablespoon + 2 teaspoons lime juice
- ½ teaspoon salt
- 2 teaspoons honey (I used Buckwheat honey)
- 1 teaspoons mint leaves
- 1/2 Serrano pepper, minced
- Slice the mangos in half around the large seed in the middle. Scoop out the flesh with a spoon. Put the flesh in the bowl of a food processor fitted with a blade.
- Add all the rest of the ingredients to the bowl, and whirl the processor like crazy. If you don't have a food processor, I'm sure a blend would work fine too.
- Chill for at least an hour before serving. I found the flavors to be best when chilled overnight.

Hi, Suzanne! One question: Do you have a rough measurement for how much mango actually goes in this recipe? I live in South Florida, where it's not only the height of mango season, but we have so many varieties in various sizes available, it's difficult to guess.

That's a fair question RJ Flamingo! I'm not sure is the sad answer. I used fairly large mangos, I can tell you that much. I could have sworn I had that discussion with someone on my blog where I posted the recipe, but I can't find it now - so I must have imagined it. I promise to make this again over the next few days and I'll give you a much more precise answer :-)

My mango trees are dripping with fruit and this is definitely going to get me outta bed to get the fruit rather than letting my chickens have em...this looks great and I have all the ingredients ready to go: do you think Tupelo honey would be a good honey to add? Or agave nectar or brown rice syrup or vermont maple?
