- 1 pound diced pork belly
- 1 chopped onion
- 1 tin chopped tomatoes
- 2 bay leaves
- 1 cup red lentils
- 1 cup chicken stock
- Place all the ingredients into a casserole dish,
- season well with salt and black pepper
- Bake at 300f for 1 1/2 hours, check that it is not drying out and add more stock if needed.
