Coconut Cream Cheese Frosting

Author Notes: I made a carrot cake for my girlfriends birthday (thank you Happyolks this made for a great birthday http://food52.com/recipes/11472-21-years-of-carrot-cake ) But she loves cream cheese frosting so I swapped out the original glaze with something I whipped up. ZombieCupcake

Makes enough for one 9inch two layer cake and extra to lick off the spoon

  • 1 8 oz package cream cheese
  • 1 cup Powdered Sugar
  • 1/3 cup Shredded Coconut
  • 1/4 cup Coconut Oil
  • 2 tablespoons Honey
  • 1 teaspoon Vanilla
  1. Cream coconut oil and cream cheese together in a medium. Once done add the rest of your ingredients. Spread on your favorite dessert that pairs well with coconut and enjoy! :-D
