Dates and Honey Clafoutis

Clafoutis can be served for breakfast or a dessert. This dates and honey clafoutis is a perfect desserts and a perfect paleo recipe to share with your friends. —Cindy Anschutz

What You'll Need
Ingredients
  • 1 cup fresh dates
  • 3 large eggs and 1 large egg yolk
  • 1/4 cup honey
  • 2 tablespoons coconut flour
  • 1/8 teaspoon sea salt
  • 1 cup cream
  • 1 teaspoon lemon zest
  • 1 teaspoon vanilla extract
  • 1 teaspoon cinnamon
  • 1/2 teaspoon freshly ground nutmeg
  • Organic butter or Coconut oil (melted) for coating
  • Fresh mint for garnish and/or whole cinnamon sticks
Directions
  1. Preheat oven to 350 degrees F
  2. Remove the pit from the date and chop them in bite size pieces pieces.
  3. Brush a medium size baking dish with melted butter or coconut oil.
  4. Take dates and lay an even layer in the baking dish.
  5. In a bowl, whisk eggs, yolk, honey, coconut flour, salt and whisk until smooth.
  6. Next add cream, lemon zest, vanilla extract, cinnamon and nutmeg. Mix well.
  7. Bake for 40-45 minutes or until puffed and lightly browned and a toothpick comes out clean.
  8. Let it set for a few minutes before slicing and serving. Serve warm.
  9. Garnish with fresh mint leaves and whole cinnamon sticks.
  10. Note: you can drizzle a little honey over the Clafoutis
