As the gin-based cocktails of summer fade to the back of our repertoires, fall calls for a more rich, deeper flavor. Bee's Knees is a classic summertime gin-based cocktail with lemon juice and honey syrup. I found an aged rum in my liquor cabinet and was inspired to make an autumnal riff on this classic. —beemar

What You'll Need
Ingredients
  • 1 3/4 ounces Aged Rum
  • 3/4 ounce Lemon Juice
  • 3/4 ounce Honey Syrup
  • 1 dash Angostura Bitters
  • 1 Maraschino Cherry
Directions
  1. Prepare the honey syrup by combining 3 parts honey and 1 part water in a small saucepan, bringing to a boil, and then removing from the heat.
  2. Combine the rum, lemon juice, honey syrup, and bitters in a cocktail shaker with abundant ice and shake vigorously for 10 seconds. Double strain into a coupe glass and garnish with a cherry.
