Strawberries N' Cream Sandwich
Makes 4
- 4 tablespoons cream cheese
- 1 tablespoon of honey
- 1 tablespoon of chopped fresh mint
- zest of one orange
- 4 strawberries, sliced
- whole wheat bread slices
- Combined cream cheese, honey, mint and orange zest.
- Spread mixture onto both slices of whole wheat bread (having the mixture on both sides of the bread helps hold the strawberries in place).
- Add sliced strawberries on top of cream mixture.

I have made these at least 5 times since it was posted and can't stop buying out of season and transported from CA to NY strawberries (or further...egads) to make this. Next stop, with more locally sourced apples and with a sprinkling of cinnamon and cardamom.

My kids actually THANK me when I put this sandwich in their lunch box. It's so flavorful with the orange zest, honey and fresh mint. Plus, the cream cheese does not make the bread soggy!
