Aunt Minnie's Apple Cake
Author Notes: This recipe has been passed down through four generations. It came from my Great Grandpa's girlfriend Minnie-what a wonderful woman. Since we are in Washington state this is perfect...for dessert, breakfast, after school snack, anytime. - MarieTSH
Makes 1 - 9 x 13 pan
- 2 cups sugar
- 2 cups all purpose flour
- 1 cup walnuts or pecans
- 1 cup raisins
- 4 cups chopped and peeled Granny Smith apples
- 2 teaspoons cinnamon
- 1/2 cup vegetable oil
- 2 eggs
- 2 teaspoons vanilla
- 1/2 teaspoon cloves
- 2 teaspoons baking soda
- 1 tablespoon lemon zest
- Combine all ingredients together with spoon. (Will be stiff like cookie dough) Spread in greased 9 x 13 pan. Bake at 350* for 1 hour.
