This is our favorite summer pasta. You can use any kind of cherry tomatoes. I often mix sun gold and red cherry tomatoes. —brunobunny

What You'll Need
Ingredients
  • 1/4 cup olive oil
  • 2/3 cup chopped bacon
  • 3 pints cherry tomatoes
  • 1 large yellow onion
  • 5 cloves of garlic
  • 1/2 teaspoon red pepper
  • 1/2 cup fresh basil
  • 1/2 cup parm
  • 2 pounds spaghetti
Directions
  1. Add a 1/4 cup of olive oil in large pan
  2. Add 2/3 a cup of chopped bacon, cook until crisp, remove bacon from pan, blot on a paper towel.
  3. Add chopped onion cook until soft, but not brown
  4. Add 4 cloves of minced garlic, cook until soft
  5. Add 3 pints of cherry tomatoes, cook for 10 minutes. Put your apron on and mash with potato masher
  6. Add bacon back in and add red pepper. Keep warm
  7. Boil water, cook spaghetti according to package
  8. Drain spaghetti and add to pan. Mix 1/2 cup of fine Parmesan cheese. Add chopped basil.
