This is a delicious gluten free and dairy free cake that comes together quickly and easily. It is moist and delicious as is, but the addition of powdered sugar, jam, or a dollop of whipped cream elevate it to dessert status. —Realish Food

What You'll Need
Ingredients
  • 1/2 cup Olive Oil
  • 1/2 cup Maple Syrup
  • 4 Large Eggs
  • 1 tablespoon Cinnamon
  • 1 teaspoon Almond Extract
  • 1 teaspoon Lemon Zest
  • 2 1/2 cups Almond Flour
  • 2 teaspoons Baking Powder
Directions
  1. Preheat oven to 350 degrees.
  2. In a large bowl, whisk the olive oil and maple syrup together.
  3. Add eggs one at a time and whisk until incorporated.
  4. Add in cinnamon, almond extract, and lemon zest and whisk until combined.
  5. Fold in the almond flour and baking powder and mix until everything is incorporated
  6. Grease an 8 inch round pan with olive oil. Line the pan with a piece of parchment that is cut to fit the bottom.
  7. Pour batter into prepared pan and bake for 30-35 minutes or until cooked through.

I made this easily and quickly on a Saturday morning. I used molasses instead of maple syrup, which definitely made it more of a gingerbread flavor, and I used Grand Marnier instead of almond flavor :)

I also forgot to set a timer when I put this in the oven and it STILL came out delicious and perfect. Highly recommend and am so glad this recipe can be flexible to what I had on hand. Paired it with some freshly brewed coffee it was great start to the weekend. Thanks for the recipe!
