The mango is enhanced with numerous international flavors, and is coated in just enough butter to make it rich. Ingredients
  • 1 Mango , ripe but not soft
  • 2-3 tbsp. Butter
  • 3 tbsp. Brown sugar
  • Cinnamon 1 stick
  • Cloves 3
  • Rum , to taste
Directions
  1. Take 1 ripe, mango , cut in about 4 or 5 slices
  2. Melt a few tbsp. butter over medium heat.
  3. Add 2 to 3 tablespoons of brown sugar; stir
  4. Add cinnamon and cloves
  5. Add mango . Cook until fairly warm and starting to soften, about 1 minute
  6. Flip and allow to cook an additional 30 seconds.
  7. Add rum (light or dark; dark has more flavor) to taste, and swirl in pan a bit
  8. Light a very long match and pass over pan.
  9. remove from heat and serve over ice cream.

Congrats on the EP. I'm picking up a mango today to make this for dessert! Do you think brandy would taste alright if I don't have a chance to pick up rum?

Diana Kennedy has a recipe like this that I make sometimes, very similar but has some lime juice that is delicious with the mango flavor. Great photo.

Darn!! I was going to do some bananas ...and you did them. Then I bought mangos today and...You did them!!! They sound great...like bananas foster. Since I have the mangos I will be making this.
