Cocoa, Pecan and Date Oatmeal Cookies

This is a very different take on oatmeal cookies. I decided to substitute many of the basics like raisins and walnuts for some of my favorite things like dates and pecans. While I was at it, I added a number of fun flavors to give these oatmeal cookies rich and complex tastes.

Ingredients
  • 1 1/2 cups unbleached flour
  • 4 tablespoons unsweetened cocoa
  • 1 teaspoon cinnamon
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • Dash cardamom
  • 12 tablespoons softened butter
  • 2 tablespoons extra virgin olive oil
  • 1 cup packed dark brown sugar
  • 1/2 cup sugar
  • 2 eggs
  • 1 teaspoon vanilla
  • 4 tablespoons Nutella
  • 3 cups old-fashioned oatmeal
  • 1 cup chopped pecans
  • 1 cup chopped pitted dates
Directions
  1. Preheat oven to 350 degrees. Place racks at next to the lowest and next to the highest positions in the oven.
  2. Combine dry ingredients - flour, cocoa, cinnamon, baking soda, salt and cardamom - in a medium-sized bowl. Whisk to make sure they are well combined.
  3. In a large bowl, use mixer to combine butter, olive oil, and sugars at a medium speed.
  4. Add eggs, vanilla and Nutella until thoroughly combined then add flour mixture at a low speed. Mix in oatmeal. Stir in pecans and dates.
  5. Bake in oven for 10 minutes. Half way through baking process move baking sheets from top to bottom and front to back.
  6. Remove from oven and let cool.
