A great banh mi sandwich is my favorite street food but often made of pork, not the most healthy choice. I made a healthy banh mi sandwich without scarifing any of the taste. —erinpclark

Ingredients
- Meatballs

rice wine vinegar

shredded cabbage

Directions

For meatballs:
Mix together well all ingredients except the baguette and form golf ball sized balls. I use an ice cream scooper so they are all the same size. Heat pan with a tablespoon of vegetable oil over medium heat. Cook meatballs until brown on all sides about 8 - 10 minutes.
Mix together first 6 ingredients and set aside. In bowl, add in all the rest of the ingredients and pour sauce over slaw. Mix well and set aside.
To assemble the sandwiches, butterfly the baguette and add in 3 meatballs, drizzle in sauce and top with slaw.
For sauce, mix together 1/4 cup of plain greek yogurt and add 1/2 lime juice, a pinch of salt, a pinch of sugar, and 1- 2 teaspoon of chili sauce.
The slaw already has a lot of sauce but it just adds that extra flavor.
