To me baking gluten-free is not about cooking without traditional flour but cooking with a variety of flours. I enjoy the challenge of thinking outside my flour canister when baking. —Ladystiles

Ingredients
  • 1 cup all-natural chunky or smooth peanut butter
  • 1 cup raw sugar
  • 1/3 cup roughly chopped peanuts
  • 2 eggs
  • 1 teaspoon baking soda
Directions
  1. Preheat oven to 350 degrees F. Grease a baking sheet with butter and set aside. In a mixer combine peanut butter, chopped peanuts and sugars until well combined, about 2 minutes. Add eggs and baking soda and mix for another 2 minutes. Roll into walnut sized balls (1 tablespoon of dough) and flatten with your palm. If you’d like, add a few chocolate pieces to the top of the cookies. Bake for 10 minutes, until lightly browned. Cool on a baking sheet for two minutes, then transfer to a wire rack to cool completely.

Mine spread out quite a bit, making these more like a crisp than a cookie. Still quite delicious, especially considering how easy they are to make. Used a smooth peanut butter this time but definitely think chunky would be the way to go.

Holy cats! These are DELISH!
I snuck in 1/3 C of Scharfenberger semi-sweet baking chunks. Cooking time about 14 minutes.

I do have a question -- have you tried to substitute stevia for raw sugar?

I had this (or a very similar one) years ago. Somehow, I misplaced it and have been searching for it for months. Thanks so much! It's a great recipe. For those who can't eat peanut butter, soy "peanut' butter works well, too.

I was so surprised by the simplicity of this recipe yet how flavorful they were! I do not need to eat gluten free but these may become a regular healthier cookie treat for me. Very tasty.
