I am obsessed with scones! I literally think about them all time and today I decided to bake some:)! I modified my Dearest Mother's recipe. In her recipe she doesn't use eggs but in mine I used 1 egg. She usually uses milk but I used Filmjolk (here in Sweden), in other countries you can use sour milk or natural yoghurt. For a more creamy/sweet scone you can add a teaspoon of vanilla sugar and 1/2 cup of high fat milk. I hope you enjoy them as much as I do!! —ChefSteadfastMT

Ingredients

All purpose Flour

4 teaspoons
baking powder

1/4 cup
Granulated Sugar

Vanilla Sugar

cooking oil

milk

FilMjolk

Preheat Oven to 400F/200C. Line two baking Sheets with parchment paper and set aside.

In a large bowl mix the flour, baking powder, sugar and salt. It's nice fluffier and adds a smoother texture if the ingredients are sieved together. Break small pieces of the butter into the flour mixture by hand and mix until it looks crumbly or coarse.

In another bowl mix the egg and the Fil/sour cream/Natural yoghurt. Add this mixture to the flour mixture and stir to combine. if the mixture is too hard whilst stirring, add the whole milk until desired texture is reached.

Take 2 tablespoons and coat in the cooking oil. Use the tablespoons to scoop and shape desired amount of the dough and place on the prepared baking sheets. Bake in the preheated oven for 10-15 minutes.
Best served when warm with jelly/jam and a nice cup of tea!
