On a recent balmy evening I was digging around in the liquor cupboard looking for something fun. I spotted the apple brandy and decided to try using it in a light, springy cocktail, along with a bit of the leftover (by which I mean flat) elderflower pressé in the refrigerator.
Elderflower pressé is basically elderflower soda. It was available everywhere when I lived in England and it's delicious. Look for Belvoir Fruit Farms Elderflower Pressé - if your local store has a British section it might be there along with the PG Tips tea and Hobnobs. If you can find elderflower cordial (a concentrated, non-fizzy syrup) feel free to use that instead and omit the simple syrup. —severill
