My husband was "tired" of gin and tonics and wondering what else could be a refreshing summer drink. I poked around in the refrigerator and liquor cabinet for inspiration. I had just bought a jug of limeade at the supermarket, and the combination of lime, mint, ginger and rum turned out to be a winner. It's easy to make and is now his "new" summer drink. —zora

Ingredients
  • 2 large mint sprigs (8-10 leaves)
  • 1/4 of a fresh lime
  • 2 ounces white or golden rum
  • 1 ounce Canton ginger liqueur
  • 4-5 ounces limeade (Simply Limeade or Odwalla are good, or make your own)
  • 7-10 ice cubes, depending on the size
Directions
  1. In a cocktail shaker or tall mixing glass, muddle the lime quarter and the mint, pressing down to crush the mint and squeeze the juice from the lime and the oil from the peel.
  2. Add ice cubes, rum, ginger liqueur and limeade to the shaker or mixing glass. Shake vigorously to blend and chill the drink.
  3. Pour everything into a highball glass. Enjoy!
